Clean Eating Pancakes
I'm the type of girl that's game for any recipe that is easy and has less than 10 ingredients! I'm also the type of girl that will sleep in until I'm basically positive I'm going to be late if I don't get up THIS SECOND. So when I came across a healthy, easy, cheap and QUICK breakfast recipe I jumped all over it.
What You'll Need:
12 egg whites (hint - use real egg whites... not the liquid kind)
1 cup quick oats
1/2 tsp. olive oil (from oil sprayer)
Optional Seasonings
Ooey-Gooey
1 tbsp clean peanut butter
Extra Fiber
1 tbsp clean hummus
Savory
1/2 tsp onion powder
1/2 tsp garlic powder
Sweet
1 tsp cinnamon
Top with maple syrup
DIRECTIONS
1. Stir both ingredients together in mixing bowl
2. Spray a non-stick pan with 1/4 tsp olive oil (just a very light mist)
3. Ladle 3 pancakes onto your pan and cook like regular pancake. Each should be approximately 1 scant ladle full. Depending on the size of your ladle, you should get about 7 pancakes out of this.
4. Spray with last 1/2 of oil and ladle the last of your pancakes.
Now - I live alone so I adjust this to fit my needs each morning. I usually use 3 egg whites and 1/4 cup oats - this makes just enough for me. :) My favorite concoction so far is 1 tsp cinnamon and thawed frozen unsweetened berries. When I'm feeling like I need a little extra something, I'll sprinkle a tiny bit of confectionery sugar on top. YUMMY! This is one of my go to breakfast recipes and definitely something I think everyone should try:)
